The Alajuela Ascent
The ecological jewel — clarity, sweetness, and altitude.
Where this route begins
We ascend to the lush micro-farms of Alajuela, Costa Rica. Situated between 1,300 and 1,445 meters, this coffee featuring the prestigious Caturra and Catuai varieties benefits from pristine microclimates and rich volcanic loam soils. Costa Rica is a global pioneer in sustainable agriculture, and this lot is a true testament to that deep respect for the land.

From cherry to bean
Our Route 03 undergoes an advanced eco-pulped process, followed by natural sun-drying. Using ultra-low friction machinery, the cherry's pulp is removed with only a fraction of the water of a traditional washed process, protecting local rivers and ecosystems. The beans are then sun-dried, achieving a flawless balance between the crisp clarity of a washed coffee and the rich sweetness of a natural.
In the cup
Thanks to a carefully monitored medium roast, we achieve an exceptionally vibrant and clean cup. Expect the unmistakable sweetness of wild honey, the crisp freshness of a sweet apple, and a subtle, elegant hint of raisin in the aftertaste.

AeroPress
The thick paper filter of the Chemex is perfect for trapping heavy oils, letting only the exceptionally clean, fruity flavors of the Caturra and Catuai shine through. To highlight that crisp "sweet apple" note, this method yields a cup that drinks almost like a high-end, elegant tea.
