Where this route begins

We navigate south to the vast, sun-drenched lands of Brazil. This microlot is sourced from the renowned Fazenda Santa Barbara, São Francisco, and Santo Antonio estates, nestled between Paraná and São Paulo. The Catuai and Mundo Novo varieties thrive on rich volcanic loam plateaus at lower elevations (750–1,050 m), translating to remarkably low acidity and a dense, creamy, exceptionally sweet body.

From cherry to bean

The outer skin of the cherry is removed, but the bean is left to dry under the Brazilian sun with its mucilage — the sticky, honey-like layer of the fruit, completely intact. This unique process drives natural fruit sugars straight to the core of the bean as it dries.
