From cherry to bean
In Chimbu, coffee is cultivated by small cooperatives scattered across remote valleys. The process begins by hand-picking only the ripest cherries at peak maturity. The beans are then fully washed with fresh mountain water, a meticulous method that highlights the clarity of the coffee's natural flavors, before being carefully sun-dried on raised beds under the highland sun, enhancing balance and sweetness.
